Blueberry Cream Pops

Blueberry and cream pops are such a fun after-school snack. Make them in the morning so the pops are ready to go when the kids come in the door. —Cindy Reams, Philipsburg, Pennsylvania





Ingredients

  • 2/3 cup sugar

  • 2/3 cup water

  • 2 cups fresh or frozen blueberries, thawed

  • 1/4 cup heavy whipping cream

  • 8 freezer pop molds or 8 paper cups (3 ounces each) and wooden pop sticks

Directions

  1. For sugar syrup, in a small saucepan, combine sugar and water; bring to a boil, stirring to dissolve sugar. Cool completely.

  2. Meanwhile, in a bowl, coarsely mash blueberries; stir in cream and sugar syrup. Spoon into molds or paper cups. Top molds with holders. If using cups, top with foil and insert sticks through foil. Freeze until firm. To serve, let pops stand at room temperature 10 minutes before unmolding.

Ingredients

  • 1 cup fresh strawberries, sliced

  • 1 cup water, divided

  • 2 tablespoons sugar, divided

  • 1 cup clementine segments (about 5 medium), seeded if necessary

  • 1/2 cup orange juice

  • 1 cup cubed fresh pineapple

  • 10 plastic or paper cups (3 ounces each) and wooden pop sticks

  1. Place strawberries, 1/2 cup water and 1 tablespoon sugar in a food processor; pulse until combined. Divide among cups. Top cups with foil and insert sticks through foil. Freeze until firm, about 2 hours.

  2. Wipe food processor clean. Add clementines and orange juice; pulse until combined. Spoon over strawberry layer. Freeze, covered, until firm, about 2 hours.

  3. Repeat with pineapple and the remaining water and sugar. Spoon over clementine layer. Freeze, covered, until firm.
