While on a recent trip to Door County, Wisconsin, for a family reunion, I created this yummy recipe using some freshly picked cherries. It was a hit with all ages and everyone was asking for more. —Heather Karow, Burnett, Wisconsin

Ingredients
1/2 cup sugar
1/2 cup plus 2 tablespoons water, divided
1/2 cup fresh or frozen pitted dark sweet cherries, thawed and finely chopped
1 tablespoon cornstarch
WAFFLES:
1-1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon baking soda
1-1/2 cups buttermilk
2 large eggs, room temperature
1/3 cup Olive oil
1/2 teaspoon almond extract
1-1/2 cups fresh or frozen pitted dark sweet cherries, thawed and chopped
Dark Chocolate chips / White Chocolate Chips
1/2 cup miniature semisweet chocolate chips
Additional miniature semisweet chocolate chips, optional
Candied Pecans, Candied Walnuts
Chicken Breasts, halved with 1 Tablespoon Butter and a portabella Mushroom cap stuffed with onions, and garlic, Italian Seasoning

Directions
Preheat waffle maker. In a small saucepan, cook and stir sugar and 1/2 cup water over medium heat until sugar is dissolved. Add cherries; cook and stir until cherries are tender, 3-5 minutes. Mix cornstarch and remaining 2 tablespoons water until smooth; stir into pan. Bring to a boil; cook and stir until thickened, 1-2 minutes. Remove and keep warm.
In a large bowl, whisk flour, baking powder, cinnamon and baking soda. In another bowl, whisk buttermilk, eggs, oil and extract until blended. Add to dry ingredients; stir just until moistened. Stir in cherries and chocolate chips. Bake waffles according to manufacturer’s directions until golden brown. Serve with syrup and, if desired, additional chocolate chips.
Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in an airtight container. Freeze cherry syrup in a freezer container. To use, partially thaw cherry syrup in refrigerator overnight. Heat through in a saucepan, stirring occasionally. Reheat waffles in a toaster on medium setting. Or, microwave each waffle on high until heated through, 30-60 seconds.

Preheat oven to 450°. Place crust on a greased pizza pan. Using a 2-1/2-in. biscuit cutter, cut out 6 circles from crust. (Remove circles and save for another use.) Break an egg into each hole. Sprinkle with cheese, bacon, peppers and onion. Bake until eggs are completely set, 8-10 minutes.

In a small bowl, combine the milk, eggs and butter. Combine flour and salt; add to milk mixture and mix well. Cover and refrigerate for 2 hours.
Heat a lightly greased 8-in. nonstick skillet; pour 2 tablespoons batter into the center of skillet. Lift and tilt pan to evenly coat bottom. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter. When cool, stack crepes with waxed paper or paper towels in between. Wrap in foil; refrigerate.
In a blender, process cottage cheese until smooth. Transfer to a small bowl; add cream cheese and beat until smooth. Beat in sugar and vanilla. Spread about 1 rounded tablespoonful onto each crepe. Fold opposite sides of crepe over filling, forming a little bundle.
Place seam side down in a greased 15x10x1-in. baking pan. Bake, uncovered, at 350° for 10 minutes or until heated through.
Meanwhile, in a large saucepan, bring cherries, 2/3 cup water and sugar to a boil over medium heat. Reduce heat; cover and simmer for 5 minutes or until heated through. Combine cornstarch and remaining water until smooth; stir into cherry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with crepes.

Ingredients
1 fresh Italian sausage link (4 ounces), casing removed
1-1/2 cups sliced fresh mushrooms
10 large eggs
1/2 cup grated Parmesan cheese

In a 10-in. nonstick skillet, cook sausage and mushrooms over medium-high heat 4-6 minutes or until sausage is no longer pink, breaking up sausage into crumbles. Remove with a slotted spoon; wipe skillet clean.
