I forgot to make a brunch for mothers day, but this is for the evening after your nice outing. I want you to know I love you with my whole heart, mind, an soul. You are what makes the day have life and what gives my life meaning and purpose. Stay connected in faith and love and let God do the rest. When we trust it gives him room to let our faith be put to the test. Know that by this time next year we will be under the same roof.
My mother is a wonderful cook who always likes to prepare (and improve on!) dishes she's sampled at restaurants. That's what I did with these blintzes, and my family loves my fruity version even more than the original.

Ingredients
BLINTZES:
9 large eggs, room temperature
1 cup all-purpose flour
1/4 cup cornstarch
1/8 teaspoon salt
3 cups 2% milk
FILLING:
2 packages (8 ounces each) cream cheese, softened
1/2 cup confectioners' sugar
Pureed raspberries or strawberries
Whipped cream, optional
Optional: Fresh raspberries or strawberries

Directions
In a large bowl, beat eggs. Add flour, cornstarch and salt; stir until smooth. Stir in milk.
Heat a lightly greased 8-in. nonstick skillet; pour 1/3 cup batter into the center of skillet. Lift and tilt pan to evenly coat bottom. Cook until top appears dry; turn and cook 15-20 seconds longer. Keep in a warm oven, covered with foil. Repeat with remaining batter.
For filling, in a small bowl, beat cream cheese and confectioners' sugar until smooth. Place about 2 tablespoons in the center of each blintz; overlap sides and ends on top of filling. Place folded side down. Serve with pureed berries; garnish with whipped cream and fresh berries if desired.

2 cups fresh or frozen cranberries
3 cups orange juice, divided
2 tablespoons lemon juice
3 bottles (750 milliliters each) champagne, chilled

Directions
Place cranberries and 1 cup orange juice in a blender; cover and process until pureed, stopping to scrape down sides of jar with a rubber spatula as needed. Add lemon juice and remaining orange juice; cover and process until blended.
Pour 1/3 cup cranberry mixture into each champagne flute or wine glass. Top with 3/4 cup champagne; serve with mint if desired.

It's a challenge to be creative with breakfast every morning, and I like to come up with fun foods the kids will love. This is a great recipe for the kids to join in and help make for breakfast. 1 prebaked 12-inch thin whole wheat pizza crust
3/4 cup reduced-fat ricotta cheese
1 teaspoon garlic powder
1 teaspoon paprika, divided
1 cup sliced baby portobello mushrooms
1/2 cup julienned soft sun-dried tomatoes (not packed in oil)
3 cups fresh arugula or baby spinach
2 tablespoons balsamic vinegar
2 tablespoons olive oil
1/4 teaspoon salt, divided

Directions
Preheat oven to 450°. Place crust on a pizza pan. Spread with ricotta cheese; sprinkle with garlic powder and 1/2 teaspoon paprika. Top with mushrooms and tomatoes.
With clean hands, massage arugula with vinegar, oil and 1/8 teaspoon each salt and pepper until softened; arrange over pizza.
Using a spoon, make 6 indentations in arugula; carefully break an egg into each. Sprinkle with the remaining paprika, salt and pepper. Bake until egg whites are completely set and yolks begin to thicken but are not hard, 12-15 minutes.

Other sun-dried tomatoes that are not oil-packed may need to be rehydrated; cover with boiling water and let stand until soft. Drain before using. Mini Sausage Quiches
These bite-sized quiches are loaded with sausage and cheese—and all nestled into easy crescent roll dough. Serve the cute muffinettes at any brunch or potluck gathering. —Jan Mead, Milford, Connecticut

Ingredients
1/2 pound bulk hot Italian sausage
2 tablespoons dried minced onion
2 tablespoons minced chives
1 tube (8 ounces) refrigerated crescent rolls
4 large eggs, lightly beaten
2 cups shredded Swiss cheese
1 cup 4% cottage cheese
1/3 cup grated Parmesan cheese

Directions
In a large skillet, brown sausage and onion over medium heat until meat is no longer pink, 4-5 minutes, breaking sausage into crumbles; drain. Stir in chives.
On a lightly floured surface, unroll crescent dough into a long rectangle; seal seams and perforations. Cut into 48 pieces. Press onto the bottoms and up the sides of greased miniature muffin cups.
Fill each with about 2 teaspoons of sausage mixture. In a large bowl, combine the eggs and cheeses. Spoon 2 teaspoons over sausage mixture in each cup. Sprinkle with paprika.
Bake at 375° until a knife inserted in the center comes out clean, 20-25 minutes. Cool for 5 minutes before removing from pans to wire racks. If desired, sprinkle with additional minced chives. Serve warm.

12 large fresh strawberries
1/4 cup Nutella
1 cup milk chocolate chips, melted
1/4 cup chopped hazelnuts

Directions
Remove stems from strawberries. Using a paring knife, cut out centers; pipe Nutella into strawberries.
Insert a toothpick into the side of each strawberry. Holding toothpick, quickly dip stem end of strawberry into melted chocolate; allow excess to drip off. Sprinkle with hazelnuts; place strawberries on a waxed paper-lined baking sheet, point side up. Remove toothpicks; refrigerate strawberries until set. Just before serving, dust with confectioners' sugar.

Ingredients

2 cups water
1-1/2 cups sugar
1/3 cup lime or lemon juice
1 teaspoon anise extract
1/2 teaspoon salt
3 oranges, peeled and sectioned
3 kiwifruit, peeled and sliced
2 grapefruit, peeled and sectioned
2 large apples, cubed
1 pint strawberries, sliced
1 pound green grapes
1 can (20 ounces) pineapple chunks, drained

Directions
In a medium saucepan, combine water, sugar, lime juice, anise and salt. Bring to a boil over medium heat; cook for 20 minutes, stirring occasionally. Remove from the heat; cover and refrigerate for 6 hours or overnight.
Combine fruit in a large bowl; add dressing and toss to coat. Cover and chill for at least 1 hour.
