Thursdays Birthday Lunch, spoiled with good food and a nice sweet ending. A way to seal the deal with the client a wonderful lunch put together by your mother who loves you she wanted to spoil you with a delicious lunch couldn't think of a better day to celebrate its almost my birthday. This year went by really really fast I cannot believe that I moved in 2019 and its almost 2022.


Time to renew my life, live it like I am dying, and learn as much as I can. I pray today you have a breakthrough and that we could be together by time my celebration day of my existence is here. I am crawling right now but I'll be running a year from my birthday. If I keep on walking eventually something is going to happen to get rid of too much weight. The art of life is to keep on going, keep on moving, and keep on dreaming your goals in to reality!

Italian Steak Sandwiches

My sister came up with these quick sandwiches that use minced garlic and other seasonings to bring pizzazz to deli roast beef. Add some carrot sticks or a tomato salad for a fantastic lunch in no time. —Maria Regakis, Somerville, Massachusetts

Ingredients

  • 2 tablespoons olive oil

  • 2 garlic cloves, minced

  • 1/8 teaspoon crushed red pepper flakes

  • 1/2 pound sliced deli roast beef

  • 1/2 cup beef broth

  • 2 tablespoons red wine or additional beef broth

  • 2 teaspoons dried parsley flakes

  • 2 teaspoons dried basil

  • 1/4 teaspoon salt

  • 1/4 teaspoon dried oregano

  • 1/8 teaspoon pepper

  • 4 sandwich rolls, split

  • 4 slices provolone cheese

  • In a large cast-iron or other heavy skillet, heat oil over medium-high heat. Add garlic and pepper flakes; cook and stir 1 minute. Add roast beef, broth, wine and seasonings; heat through. Place beef slices on rolls; drizzle with broth mixture. Top with cheese. Freeze option: Freeze cooled meat mixture and juices in freezer container. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth if necessary.

Directions

  • Preheat air fryer to 360°. Using a mandoline or vegetable peeler, cut potatoes into very thin slices. Transfer to a large bowl; add enough ice water to cover. Soak for 15 minutes; drain. Add more ice water and soak another 15 minutes.

  • Drain potatoes; place on towels and pat dry. Spritz potatoes with cooking spray; sprinkle with salt. In batches, place potato slices in a single layer on tray in greased air-fryer basket. Cook until crisp and golden brown, 15-17 minutes, stirring and turning every 5-7 minutes. If desired, sprinkle with parsley.

Ingredients

  • 2 cups heavy whipping cream

  • 1/4 cup Irish cream liqueur

  • 3 large eggs

  • 2 large egg yolks

  • 3/4 cup plus 2 tablespoons sugar, divided

  • 1 teaspoon vanilla extract

Directions

  • Preheat oven to 325°. In a saucepan, heat cream and liqueur until bubbles form around sides of pan; remove from heat. In a large bowl, whisk eggs, egg yolks and 3/4 cup sugar until blended but not foamy. Slowly stir in hot cream mixture. Stir in vanilla.

  • Place six 6-oz. broiler-safe ramekins in a baking pan large enough to hold them without touching. Pour cream mixture into ramekins. Place pan on oven rack; add very hot water to pan to within 1/2 in. of tops of ramekins.

  • Bake 20-25 minutes or until a knife inserted in the center comes out clean; centers will still be soft. Immediately remove ramekins from water bath to a wire rack; cool 10 minutes. Refrigerate until cold.

  • To caramelize topping with a kitchen torch, sprinkle custards evenly with remaining sugar. Hold torch flame about 2 in. above custard surface and rotate it slowly until sugar is evenly caramelized. Serve immediately or refrigerate up to 1 hour.

  • To caramelize topping in a broiler, place ramekins on a baking sheet; let stand at room temperature 15 minutes. Preheat broiler. Sprinkle custards evenly with remaining sugar. Broil 3-4 in. from heat 5-7 minutes or until sugar is caramelized. Serve immediately or refrigerate up to 1 hour.

  • In a small bowl, combine the first seven ingredients; cover and chill until serving.

  • Spritz mushrooms with cooking spray. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill mushrooms, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or until tender. Spoon 1/2 cup tomato mixture into each mushroom cap.
