A sure win; with 3 entrées and 3 side dishes for them to accompany with appetizers and we have pork chops, shrimp scampi, and a sophisticates favorite with Pepperoni Pasta and Pesto Pizza for those who might not like one or the other. Its football day so have an early lunch so your fathers can have a good meal before working the night crew and the NFL network.
Busy-Day Pork Chops

Ingredients
1/4 cup fat-free milk
1/4 cup seasoned bread crumbs
1/4 cup grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
4 boneless pork loin chops (4 ounces each)

Directions
Preheat oven to 375°. Place milk in a shallow bowl. In another shallow bowl, toss crumbs with cheese and seasonings.
Dip pork chops in milk, then coat with crumb mixture. Place on a baking sheet coated with cooking spray; lightly spritz chops with cooking spray.
Bake 8-10 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving.

Ingredients
1 prebaked 12-inch thin pizza crust
2 garlic cloves, halved
1/2 cup pesto sauce
3/4 cup packed fresh spinach, chopped
2 large portobello mushrooms, thinly sliced
1 medium sweet yellow pepper, julienned
2 plum tomatoes, seeded and sliced
1/3 cup packed fresh basil, chopped
1 cup shredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon fresh or dried oregano

Directions
Preheat oven to 450°. Place crust on an ungreased 12-in. pizza pan. Rub cut side of garlic cloves over crust; discard garlic. Spread pesto over crust. Top with spinach, mushrooms, yellow pepper, tomatoes and basil. Sprinkle with cheeses and oregano.
Bake until heated through and cheese is melted, 10-15 minutes.

Directions
In a large saucepan, combine the beans, water and soup mix. Bring to a boil. Reduce heat; cover and simmer until beans are crisp-tender, 15-20 minutes.
In a small bowl, combine the almonds, cheese and paprika. Drain beans; drizzle with butter and sprinkle with almond mixture. Toss to coat.

Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in spaghetti sauce and pasta.
