Well, we made it through a case of the Mondays and happy to say we are on our way to one more week it feels later in the year than it should. Now is the time to start anticipating the NFL Draft. Perhaps you could have a Football league with your father and your clients? Its cool in here today at 72* indoors its the perfect day to get ahead like I am.

We can train tomorrow today you can start to do your yoga and then do some walking on Wednesday and Friday to train for your 3k walk.

Ingredients

  • 8 cups fresh baby spinach

  • 1 cup chopped tomatoes

  • 2 tablespoons olive oil, divided

  • 1-1/2 cups chopped fully cooked chicken

  • 1 small onion, chopped

  • 1 small green pepper, chopped

  • 4 large eggs

Directions

  • Arrange spinach and tomatoes on a platter; set aside. In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add ham, onion and green pepper; saute until ham is heated through and vegetables are tender, 5-7 minutes. Spoon over spinach and tomatoes.

  • In same skillet, heat remaining olive oil over medium heat. Break eggs, 1 at a time, into a small cup, then gently slide into skillet. Immediately reduce heat to low; season with salt and pepper. To prepare sunny-side up eggs, cover pan and cook until whites are completely set and yolks thicken but are not hard. Top salad with fried eggs.

  • 6 cups water

  • 1-1/2 cups steel-cut oats

  • 1-1/2 cups unsweetened applesauce

  • 1/4 cup maple syrup

  • 1-1/2 teaspoons ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/8 teaspoon salt

  • 1 large apple, chopped

  • Optional: Sliced apples, toasted pecans and additional maple syrup

Directions

  • In a 4-qt. slow cooker, combine the first 7 ingredients. Cover and cook on low for 6-8 hours or until liquid is absorbed. Stir in chopped apple. If desired, top servings with apple slices, pecans and syrup.

Directions

  • In a large bowl, combine the first 9 ingredients. In a small bowl, whisk the eggs, buttermilk, pumpkin and melted butter. Stir into dry ingredients just until moistened.

  • Bake in a preheated waffle maker according to manufacturer’s directions until golden brown. Serve with butter and syrup if desired. Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in an airtight freezer container. To use, reheat waffles in a toaster on medium setting.   • In a small bowl, whisk eggs, egg whites, salt and pepper until blended. In a small nonstick skillet, heat butter over medium-high heat. Add mushrooms; cook and stir 3-4 minutes or until tender. Add spinach; cook and stir until wilted. Reduce heat to medium.
